Is there a clear, light dressing that would be good with these ingredients-something I can make at home?

BERMUDA SALAD BOWL





1 sm. head cauliflower


1/2 lg. Bermuda onion, sliced in rings


1/2 c. sliced olives


1 head lettuce, torn into bite-size


2 oz. crumbled blue cheeseIs there a clear, light dressing that would be good with these ingredients-something I can make at home?
Mix 1/2 cup corn oil with 1 package artificial sweetner or 1 teaspoon sugar, add 8- 10 Tablespoons vinegar. Shake in a jar. You can add any dried or fresh herb you have if you want to.Is there a clear, light dressing that would be good with these ingredients-something I can make at home?
A white vinegarette would be great. One part olive oil, 2 parts white wine, couple of cloves of fresh garlic, 1 tbs dijon mustard, dash of salt, pepper, oregano, sugar and crushed red pepper.
2 Shallots, peeled


3 tbs honey


1/2 cup Champagne vinegar


5 sprigs thyme, leaves picked


1 1/2 cups olive oil


Salt and pepper to taste





In a blender add shallots, honey and vinegar and thyme leaves. Blend until shallots and vinegar make a white frothy foam. While blender is running slowly add olive oil until an emulsion is formed. Adjust seasoning.





Vinaigrette will break because the only ingredient that emulsifies is honey. Just put into a shaker jar and re-shake if the liquid separates.
How about a balsamic vinaigrette dressing or one with some raspberry in it, just to sweeten it up? Raspberry is delicious with bleu cheese
